Heart Healthy Fish Chowder

 Ingredients
-Diamond Bakery Saloon Pilot Crackers

-Large stainless cooking pot  
-2 lbs fresh Haddock
-1 large Vidalia onion, chopped
-4 medium Red potatoes, peeled and diced
-Water enough to just cover onions and potatoes
-1 can low-fat evaporated milk
-2 cups 1% milk
-1 tbsp butter

Directions

Put potatoes, onions and water in cooker on med-high heat. Cook until slightly tender. Add haddock on top of veggies. Cook on medium heat until fish flakes easily. Add evaporated milk and 1% milk, heat until hot but do not boil. Season with salt and pepper. Remove from heat, add butter to melt in chowder. Serve hot with Saloon Pilot Crackers!
