What started off as a dream between friends has grown to become Diamond Bakery, a household name in Hawaii. The company, named after the famous Diamond Head landmark on Oahu, was founded in 1921 by three Japanese immigrants, Hidegoro Murai, Kikutaro Hiruya, and Natsu Muramoto. They all enjoyed baking and had the vision to create Hawaii’s first bakery focused on the perfect Hawaiian-made cracker.

Although the friends encountered several obstacles in the early years of the business, it was the company’s good fortune to hire experienced baker Sam Dunphy to oversee production. By 1937, Diamond Bakery had mastered the ability to bake crackers and cookies to the highest levels of taste and texture. Many of those same products are still enjoyed today by families throughout Hawaii, creating a sense of nostalgia for many people on the Islands.

These timeless, iconic products include Graham, Soda, Saloon Pilot, and Royal Creem crackers, along with Hawaiian Animal crackers and cookies.

Having been around for over 100 years, Diamond Bakery is the largest cracker and cookie manufacturer in Hawaii. Through the founders’ dedication, sacrifice, and aloha, the demand continues to grow for Diamond Bakery’s products. The continued vision of second and third-generation family members serving on Diamond Bakery’s board of directors has resulted in its ongoing expansion and success. From its distribution of sea biscuits of Saloon Pilot crackers on the East Coast in 2009 to retail sales in Japan and the South Pacific, Diamond Bakery now shares aloha with people throughout the world.

Diamond Bakery has achieved great loyalty thanks to time-tested recipes, pristine Hawaiian water, and local ingredients. Each recipe is carefully selected to give customers the ono-licius taste that has been making people smile for generations…remaining one of Hawaii’s favorite bakeries.

In 2023, Diamond Bakery introduced Fundraising to its line of products, 16 oz. bags of cookies in flavors not available at retail are offered to non-profits in our community to enable them to fund projects, equipment, and events. It’s another way that Diamond Bakery supports our Hawaii Ohana.

The first generation of Hawaiian Shortbread cookies were introduced to appeal to the visitor market - and quickly became sought after

The launch of Macadamia Nut Hawaiian Shortbread cookies took Diamond Bakery to a whole new level or delectable, premium cookie offerings.
