Tropical Fruit Cobbler with Crunchy Soda Cracker Streusel
Ingredients
• Non-stick cooking spray
• 1 (10-oz.) bag frozen pineapple chunks
• 1 (10-oz.) bag frozen mango chunks
• 2 Tablespoons lime juice
• 1 Tablespoon cornstarch
• 1 teaspoon vanilla extract
• 1/2 cup Diamond® Bakery Soda Cracker Meal
• 1/4 cup butter, softened
• 1/4 cup sweetened, shredded coconut
• 1/4 cup macadamia nuts, crushed
• 2 Tablespoons light brown sugar
• 1/2 teaspoon ground cinnamon
Instructions
Preheat oven to 350˚F. Spray an 8” X 8” glass baking dish with cooking spray.
In a large bowl, combine pineapple and mango chunks with lime juice, cornstarch, and vanilla extract. Stir well to combine and coat the fruit. Pour mixture evenly into prepared baking dish.
In a medium bowl, combine Diamond® Bakery Soda Cracker Meal with butter, coconut, macadamia nuts, brown sugar, and cinnamon until crumbly. Sprinkle the mixture evenly over the fruit in the baking dish.
Bake at 350˚F for 25-30 minutes, until the fruit is hot and bubbly and the streusel is brown and crispy. Serve warm.
