Parmesan-Prosciutto and Herb Cracker Stuffed Shrimp
Ingredients
• 2 lbs – Jumbo Shrimp, (about 20) peeled, deveined, leaving tail shelled
• 1/2 tsp – Black Pepper, finely ground, divided
• 6 oz – Prosciutto, finely diced
• 1/3 cup – Parmesan, grated
• 1/4 cup – Green Onions, diced
• 3 Tbsp – Fresh Parsley, finely diced
• 3 Tbsp – Mayonnaise
• 3 Tbsp – Lemon Juice
• 7 Tbsp – Salted Butter, melted, divided
• 1 Tbsp – Roasted Garlic Paste
• 1 – Medium Egg, beaten
• 1 1/3 cups – Diamond Soda Cracker Meal, divided
• 1/4 tsp – Italian Seasoning
Instructions
Preheat oven to 350 degrees. Heavily coat a large glass baking dish with butter
spray.
Butterfly slice shrimp by length and place in a baking dish, cut side up. Sprinkle
shrimp with 1/4 tsp of pepper.
Mix prosciutto, parmesan, onions, and 2 tbsp parsley together in a large bowl.
Stir mayonnaise, lemon juice, garlic paste, egg, 3 Tbsp butter, and 1/4 tsp pepper
together in a small bowl. Mix well.
Combine the butter mixture with the prosciutto mix in the large bowl. Stir 1 cup of
cracker meal into the bowl. Mix well.
Press 2 Tbsp of the cracker mix into each shrimp. Place shrimp back in the dish,
stuffed side up.
Sprinkle the remaining 1/3 cup cracker meal and the remaining 4 Tbsp butter over the
shrimp. Dust Italian seasoning over shrimp.
Bake shrimp for 25 minutes.
