Big Game, Big Flavor!

The Super Bowl is approaching, and playtime is over — the challenge of throwing a great Super Bowl Party is upon us! You can’t throw a memorable Super Bowl party without an epic blend of cracker spreads for everyone to enjoy! Don’t worry, Diamond Bakery has you covered! The appetizers set the tone for your party and we’ve got just what you need — here are some recipes for the ultimate Super Bowl cracker dip that will keep your guests happy and enthusiastic about the game!

One classic must-have dip for any party is a Pimento Cheese Dip. All you need is a medium sweet onion, sliced pimentos, sharp cheddar cheese, mayonnaise and kosher salt! Just puree onion and pimentos in a food processor until smooth for 30 to 45 seconds. Combine onion mixture, cheese, and mayonnaise in a bowl, season with salt and pepper, cover and refrigerate for 2 hours and voila! This dip is perfectly served with Diamond Bakery soda crackers!


Another fan-favorite is a creamy artichoke dip packed with flavor! Here’s what you’ll need: olive oil, unsalted butter, garlic, shallots, flour, 2% milk, low fat cream cheese, salt, white pepper, baby spinach and artichoke hearts! To make it: in a medium saucepan over medium heat, heat olive oil and butter. Sauté garlic and shallots until translucent for 4 to 5 minutes. Add flour and cook, stirring constantly, for an additional 2 minutes. Add milk, increase heat to medium-high, and whisk until mixture just begins to boil, about 6 minutes. Continue to cook, still whisking, 1 to 2 minutes more, until mixture thickens. Remove the pan from heat and add cream cheese, 3/4 teaspoon salt, and white pepper, stirring until cheese melts. Set aside. In a large skillet over medium-high heat, combine spinach, remaining salt, and 1/4 cup water and cook, stirring occasionally, until spinach is completely wilted, 4 to 5 minutes. Drain spinach and, once cool enough to handle, squeeze out liquid. Transfer spinach to a cutting board and roughly chop. Return milk mixture to stovetop over medium heat. Add spinach and artichokes. Cook, stirring occasionally, until mixture begins to simmer. Add more salt and pepper, if desired, and serve hot paired with the cracker of your choice.
