Large stainless cooking pot
2 lbs Fresh haddock
1 large Vidalia onion, chopped
4 medium Red potatoes, peeled and diced
Water enough to just cover onions and potatoes
1 can Low-fat evaporated milk
2 cups 1% milk
1 tbsp Butter
Diamond Bakery Saloon Pilot Crackers
Put potatoes, onions and water in cooker on med-high heat. Cook until slightly tender. Add haddock on top of veggies. Cook on medium heat until fish flakes easily. Add evaporated milk and 1% milk, heat until hot but do not boil. Season with salt and pepper. Remove from heat, add butter to melt in chowder. Serve hot with Diamond Bakery Saloon Pilot Crackers.
